The beginning of our commercial kitchen dates back many years to the creation of the Bonner Business Center in 1992. Located by the Sandpoint Airport it housed our current equipment in a commercial kitchen along with storage and business spaces working as an incubator for new businesses. Upon the sale of the Bonner Business Center building in 2014 the lights went dark and the kitchen equipment went into storage.

In 2018 Jayme Cozzetto, owner of Kitchen Spokane (mall based commercial kitchens), got together with local businesses, PAC (Panhandle Area Council) and the Bonner Mall and Created Kitchen Ponderay with the original equipment from the Bonner Business center. Once again there was a commercial kitchen available for rent in North Idaho! In the spring of 2023 Jayme unexpectedly passed away and the kitchen was once again in limbo.

In the summer of 2023 a group of the users of Kitchen Ponderay got together and with the help of Brent Baker (PEP) formed the new Non Profit POSFI to keep the Kitchen resource available to the community. In 2024 POSFI received a grant with the help of the Bonner County Soil & Water District (Sarah Garcia) to update the kitchen and add some much needed equipment to the kitchen.

The Pend Oreille Specialty Food Incubator’s purpose is to work with others to develop a vibrant economy of diverse food-related businesses and industries that offer quality job opportunities and help build prosperity regionally.
